Oat and Banana Pancakes

Fluffy oat and banana pancakes topped with berries and nuts—a healthy, fiber-rich breakfast that’s easy to make!

Ingredients

  • 1.5 cups of oats
  • 2 ripe bananas
  • 2 eggs
  • 2 teaspoons baking powder
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • Fruits of the forest (fresh or frozen)
  • Almonds – 30gr

Preparation

  • Add the oats, bananas, eggs, baking powder, vanilla, cinnamon and salt in the mixer for a smooth mixture.
  • Add a tiny amount of olive oil on your pan
  • Add 1/3 of a cup of mixture on the pan and bake each side for 2-4 minutes
  • Add fruits of the forest in a pan for 2-3 minutes, add some sweetener if you like so and then add it on top of your pancakes. Add some unsalted nuts (1 tablespoon) on top and ½ teaspoon of honey if preferred

Portion – 2 pancakes with ½ cup of fruits of the forest on top and some nuts
